This has quickly become an Inspiration Outdoors favourite. It may have the colour scheme of your kitchen back in the 70’s, but the flavours are definitely not outdated.

This Orange and Fennel Salad goes perfectly with a nice piece of salmon, or Moroccan chicken. Or turn up to your next BBQ with this guy and you will be guaranteed that “your salad looks better than my salad” cold stare from your jealous neighbour.

Ingredients you will need:

– One bulb of fennel, cored and sliced as thinly as you can.
– A bunch of rocket or spinach or both. We also often use Kale. The trick with kale is to massage it roughly so it softens up a bit.
– 2 oranges (one peeled and cut into 1/2 cm slices, then quartered. Juice the other orange for the dressing)
– The seeds of one pomegranate (note we didn’t have any when the above photo was taken and it was still delicious)
– Some toasted walnuts
– A splash of olive oil
– Salt and pepper to taste

Optional: For that real disco colour scheme, add in a small amount of finely slice red cabbage. Far out man!

Method:

Start with a bed of your chosen leaves on a flat tray or plate. Sprinkle on your finely sliced fennel and your orange segments. Scoop out your pomegranate seeds on top and then dress with the orange juice and olive oil. Add salt and pepper to taste. Scatter the walnuts on just before serving.

Make sure you don’t toss it until the jealous neighbour has seen it!
